The Fairy Tale Pumpkin:
A Winter Staple One food that I had not considered until the pandemic as a staple is the famed fairy tale pumpkin, or the French pumpkin. So these pumpkins are a lot of healthy fiber and taste great once cooked in various ways, though baking it and storing it in containers for the week— after draining liquid is easy and satisfying. And I enjoy pumpkin seeds roasted and seasoned. It's also a tempting halfway point to make vegan pumpkin pie from fresh pumpkin.
One Musque de Provence pumpkin can feed a very hungry vegan for about a week. So this is a wonderful staple to include for winter raw food storage.
